canning, freezing, and eating - oh my!

I've got to get busy using up all the goodies I gleaned from the garden tonight before the frost sets in!



My plans so far:
blanch and freeze the swiss chard
make pepper jelly from the green peppers and jalapenos
can the leftover jalapenos
freeze the leftover green peppers
I haven't decided yet what to do with the banana peppers - maybe I'll can a quart of them along with the jalapenos.
Eat the tomatoes and broccoli Smile

This will do it for the garden, except for the beets. If the frost doesn't arrive, I'll be able to get a bit more swiss chard too.

    Don't you love a veggie garden?? I was just out in mine pulling out the old zuchinni vines and found 2 decent zuchinni's hiding! A couple more meals and a couple more zip locks of shredded zuchinni for baking!

    Nice to know someone else cans!! Seeing the pantry shelves filling up is almost as good as eating dinner right out of your garden.

    That's great. I wish I knew how to can...I need to spend this weekend harvesting my herbs, making pesto, and freezing everything else. Sounds like a good Sunday thing to do, I just hope the weather holds out...

    Ok, confession time. I truely don't know how to can. But I did successfully make a batch of pepper jelly a few weeks back, following someone's very excellent step-by-step directions on recipezaar.com. So last night I got online and looked up some more canning recipes, all with very specific directions. I WILL learn this! I can (no pun intended) do it!

    BA, it's a Sony Cybershot, 5.1 megapixels. I had a crummy digital camera (just over 1 megapixel) when my first son was born, but decided I needed a better one when ds2 was on the way. My parents gave me this one for my birthday two years ago - I LOVE it. It's very easy to use and download pics from.

    jodi: so cool to see someone my age that actually wants to can!!! and you're right: you can can (hehehehehehe!!!). i have the same camera, or the one right after, don't know the model. either way, it's a joy to shoot with. food pictures are almost always pretty, though.

    You can all come over to dinner... soon as you move to central NY! Seriously, I wish everyone I've met here was local. I would love to be able to get together with some kindred spirits - and I love to entertain!

    Joan - it's swiss chard. For some reason, my spinach did not come back this year after I cut it the first time. Luckily, I can use swiss chard in a lot of my spinach recipes. I just froze all of that chard today (a plastic grocery bag overflowing) - and got two ziploc baggies full. Hmph.
