cooking spray
4 c. old fashioned oats (I used quick cooking)
1 c. sliced almonds
1/2 c. golden brown sugar, packed (I used 1/4 c. brown sugar with 1/8 c. Splenda brown sugar)
1/4 t. salt
1/8 t. ground cinnamon
1/3 c. oil (I used 1/4 c.)
1/4 c. honey
2 T. sugar
4 t. vanilla extract
Preheat oven to 300. Lightly spray baking sheet with cooking spray (I had to use two baking sheets). Mix next 5 ingredients in large bowl.
Combine oil, honey, and sugar in sall saucepan and bring to a simmer over medium heat. Remove from heat and stir in vanilla. Pour over oat mixture - stir well. Use hands to toss until thoroughly mixed. Spread on baking sheet and bake until golden brown, 20-30 minutes, stirring occasionally. Cool completely and store in airtight container at room temperature for up to two weeks. Makes about 8 cups.
(I split this into two batches - for mine, I added coconut before baking. For my mom's, I added raisins after baking).
